This salad is GOOOOOOOD. Again, something I came up with from the ingredients in my fridge. We had gone to a BBQ the day prior and got to take home the fajita leftovers! SO, this salad’s protein consists of carne asada, chicken, & pork! Quite the combo, but it turned out great. Just one of these proteins would have been just fine as well.
Salad Ingredients:
- Field Greens
- Cherry tomatoes
- Red Onion
- Avocado
- Crunched up tortilla chips
- Your choice of protein
Salad Dressing Ingredients:
- 1 lime, juiced
- 1/3 cup greek yogurt
- 1/4 teaspoon salt
- 1/2 bunch cilantro
- 1 1/2 cloves garlic
- 2 tablespoons OO
- honey to taste *optional
Blend
Toss salad with dressing & top with crunched tortilla chips. YUM!
