Shrimp Tacos with Black Beans and a Mango Pico De Gallo

This recipe was inspired by my workout plan through Tone It Up and has easily become one of my FAVORITE recipes. It is delicious.

If you don’t like shrimp, choose any type of fish you like!

Taco Ingredients:

Serving size: 6 tacos

  • 3 (or more) endive lettuce
    leaves OR sub a corn tortilla
  • 1⁄4 cup black beans
  • 3 oz. grilled white fish or
    shrimp

Salsa Ingredients:

  • 1⁄2 mango, diced
  • 1 red bell pepper, diced
  • 1⁄4 cup red onion, diced
  • 1⁄4 cup cilantro, diced
  • 1 jalapeño, diced
  • 2 limes, juiced
  • Pinch of salt & pepper

Grill or pan-fry up your shrimp- this does not take long at all! I typically know my shrimp is done when it turns a brighter orange.

Add all the salsa ingredients to a bowl and mix it all up!

Warm tortillas over stove flame and crisp them to your liking.

Compile the ingredients on your tortilla or lettuce cup and chow down!
