Ever had the egg bites from Starbucks? SO good & SO expensive. Try these. They are easy to make, healthy, & great for week days on the go!
Ingredients:
- 1 tablespoon OO
- 1 zucchini, diced
- 1 bell pepper, your choice
- 1/4 cup yellow onion, diced
- Lil salt
- Lil garlic powder
- Lil pepper
- 6 eggs
- 3 egg whites
- Coconut oil (to prepare your pan)
Instructions:
Pre-heat oven to 350
Oil your pan and turn heat to medium
Once your pan is heated, add veggies, add seasonings, and sauté for about 8 minutes
Combine eggs and egg whites, whisk together
Once veggies are done add a little bit to each muffin in muffin tin, then pour your egg mixture over and fill
Bake for 20-25 mins
These babies are good for up to 4/5 days in a sealed container in your fridge! Heat up and serve.
